Summer Salsa

Five years ago, my friends opened Olio Tasting Room in Old Town Alexandria, VA.  It's been a great success, and it's my favorite shop to find an assortment of olive oils and vinegars to use in my day to day cooking.  On occasion, you may have noticed that I feature their products in my recipes- there are so many great products, I love using them!  (Don't fret if you're not local, Olio ships, too!)

In celebration of their 5th Birthday Celebration, I created a zesty summer salsa using their Persian Lime Olive Oil.  This is a great recipe to take to your next cook-out, party, or just for sitting on your deck enjoying the summer heat with a tasty, tall margarita.  It can also be made quickly in a blender if you're short on time!  

Summer Salsa

Makes: 4-6 Servings


6 Roma Tomatoes, diced

4 cloves Garlic, minced

2 Jalepenos, minced

1/2 Red Onion, diced

1 Tbl Olio Tasting Room Persian Lime Olive Oil

1/2 Lime, juiced

1/4 C Chopped Cllantro Leaves

Salt & Pepper, to taste


Combine all ingredients in a large bowl.  Store in refrigerator until ready to serve.
