The weather has been getting better, and it looks like we may almost be out of the woods as far as Winter goes. That probably means it’s time to panic because you’ve let those New Year’s Resolutions slide and your January Whole 30 is nothing but a distant memory.
I’ve been working a lot on my digestion lately, hoping to resolve a variety of issues, and it’s helping immensely. This smoothie is great for digestion because of the pineapple, as well as the ginger. The turmeric in the smoothie is a great antioxidant, and is a potent anti-inflammatory. I chose to use Vital Proteins Collagen Peptides for protein because I wanted a neutral flavor with all the other tropical flavors going on. But the collagen peptides are also great for gut health, along with your skin, bones, hair, and nails!
I always try to minimize fruit, and add two cups of greens in every smoothie I make. This time I used a blend of greens (I think they actually call it “Power Greens”), but you could use all spinach or kale or even add some riced broccoli if you want. I tend to bulk buy my greens, steam them two cups at a time in the microwave, and pre-freeze them into a large ice cube tray like this one. Sometimes I mix & match veggies, adding broccoli or asparagus to the mix (especially if I’ve got something sitting in the fridge I need to use up).
I found my frozen coconut chunks at Trader Joe’s. If you don’t have one near you, check your local grocer’s freezer section- I’ve seen coconut chunks in a few stores recently. If all else fails, you could probably add a quarter cup or so of coconut cream (you can skim it right off the top of a chilled can of full fat coconut milk).
I hope you enjoy this smoothie as much as I do. I tossed it together on a whim to use up some fruit, and now it’s one of my favorites!!
I Like Pina Coladas Smoothie
1 C Coconut Water
2 C Greens (spinach, kale, etc.)
1 C Pineapple Chunks (frozen or fresh)
1/2 C Frozen Coconut Chunks
1” piece of Ginger
1” Piece of Turmeric (may be omitted if it’s not available)
1 t Maca (optional)
