Bunny Mimosas

SPRING IS HERE!

With Spring come many celebrations. And whether you celebrate anything formal, religious, or are just plain stoked that the sun is still out past 6 PM, Spring is definitely something to get excited about. I know I’ve felt like 2023 got off to a slow start, but the Spring Equinox has lit a fire under me, and that’s something worth celebrating!

This year, I’ll also be celebrating Easter with my mom in my new home. I’m making Easter brunch at home, and I’m definitely going to be serving these adorable Bunny Mimosas.

Be sure to check out the notes at the end of the recipe, and feel free to mix and match juices to your own taste. I hope you enjoy making them as much as I do!

BUNNY MImosas

Serves 4.

Ingredients:

If Juicing Yourself:

1 LB Carrots

3 Oranges

1 Small Piece of Fresh Ginger, peeled

OR:

1 C Carrot Juice

1 C Orange Juice

1 Tbl Ginger Juice (optional)


4 Carrot Tops

OR

1 Bunch Fresh Parsley

2 C (about 500 mL) Sparkling Wine, Champagne, or NA Sparkling Alternative

Directions:

Juice Carrots, Oranges, and Ginger. These may be juiced together and put in a Pitcher.

If using pre-bought Juices: Combine Carrot, Orange and Ginger Juices in a Pitcher.

Pour Juice mixture evenly into 4 wine or champagne glasses.

Top with Sparkling Wine or Alternative.

Place a fresh Carrot Top or Sprig of Parsley into the glass.

Serve immediately.

Notes:

  • You can easliy use store bought juice, or juice your own fruits and veggies. Both directions are above.

  • Feel free to mix the juices to your own taste, or the tast of your guests.

  • You can make the juice ahead a day or so and store it in the fridge.

  • This can easily be topped off with a flavored sparkling water- I’d bet ginger, orange, or even unflavored would work.
