Cool Ranch Cottage Cheese Dip

Number 2 in my short & sweet Dip Series features one of my favorite ingredients- cottage cheese! And it’s high in protein, so even if you’re making it the star of your next “girl dinner” you won’t be looking for unnecessary late night snacks.

I love cottage cheese- it’s a a versatile dairy staple. Lately it’s been one of my go-tos when I’m not sure what I want to eat, and don’t feel much like cooking. It can be enjoyed on it’s own, or with fruits, vegetables & even savory dishes!

I went through a period where I wasn’t eating dairy- to be honest, I still don’t wat much. But I’m selective about it. I made this recipe with a local, cultured, full fat cottage cheese. Good Culture is a decent brand, if you can’t find a local one near you.

I’ve used this Dip with veggies & crackers, on toast, and even on sweet potatoes. The options are endless. Give it a try, and let me know if you come up with some other great uses for it in the comments!



Cool Ranch Cottage Cheese Dip

Ingredients:

Cottage chees edip in a brown bowl with veggies and crackers.
  • 2 C Cottage Cheese

  • 1/2 Avocado

  • 1/4 C Fresh Dill, chopped small

  • 1/4 C Fresh Parsley, chopped small

  • 1 ½ Tbl Lemon Juice

  • 1 1/2 Tbl Olive Oil

  • 1/4 tsp Salt

  • 1/4 tsp Pepper

  • 1/2 tsp Garlic Powder

Directions:

Place Cottage Cheese, Avocado, Herbs, Lemon Juice and Olive Oil into a bowl.

Blend with a spoon, hand mixer or whisk until whipped together.

Add in Salt, Pepper and Garlic Powder.

Place the dip into a bowl. Garnish it with additional Herbs as desired.

Serve with crackers and fresh vegetables.

Notes:
You may use a food processor or blender to combine the ingredients if you prefer the Dip to be super smooth.

Feel free to add in any other Herbs as desired. The total amount should equal around 1/2 Cup.

This is also delicious spread on Toast or topping Baked Potatoes.
