Grain Free Granola

Life has been a bit hectic lately. So many changes taking place- all good, but all at once. I’ll be sharing things as they develop and move forward, but I’m super happy in my life right now. I feel very fulfilled and grateful.

Needless to say, the blog and recipe creation have taken a bit of a back seat lately. However, before things got really crazy, I was able to finish this one. I love granola, and I definitely have a few reliable brands I will purchase. But I also love to make my own- it’s nice to have complete control over the ingredients that go into it, and it’s fun to play around with new flavors and ideas.

This granola is grain free, but it’s also delicious! I’ve been topping my cottage cheese with this, putting it on baked sweet potatoes (no really, it’s a lovely combo), and snacking on it when I’m needing a quick boost. The spices are warming, and there’s just a touch of maple syrup added for sweeteness. Give it a try- I think you’ll love it as much as I do!

Grain Free Granola

Ingredients:

1 C Macadamia Nuts

1 C Slivered Almonds

1 C Pepitas

1/2 C Unsweetened Coconut Flakes

2 Tbl Chia Seeds

1/4 C Maple Syrup

2 Tbl Coconut Oil, melted

1 tsp Vanilla Extract

1 tsp Cinnamon

1 tsp Cardamom

Directions:

Heat oven to 325 degrees F.

Chop Macadamia Nuts in a Blender or Food Processor, if desired. Don’t chop too small, just enough to brak down the size a bit.

Mix Nuts, Seeds, and Spices in a large bowl.

Pour in Maple Syrup & Coconut oil & stir to combine.

Spread evenly onto a parchment lined baking sheet.

Place in oven for 15 minutes.

Notes:

  • You can use any nuts you want in this- I just love the Macadamia Nut and Coconut combo.

  • If you can’t do nuts, feel free to relace with a variety of seeds to make 3 Cups total to replace the first 3 ingredients.

  • I found the large Unsweetened Coconut Flakes work well in this recipe, but you can also use Unsweetened Shredded Coconut as well.

  • Use as a topping for yogurt, sweet potatoes, or even ice cream!
