Ginger Lemon SPARKLER Mocktail

January always feels like the longest month of the year. It’s been very bleak and cloudy, which often makes the weeks feel longer, and the days shorter. Luckily, we’re more than halfway through- days are getting longer, and Spring will be here before we know it.

As promised, here is the secondof my Dry January Mocktail series. This Lemon Ginger Sparkler is tart and fizzy. While the Ginger is warming for Winter, this mocktail would also be super refreshing in the Summer.

There are a few steps to this mocktail, and I’ll admit, my patience for such recipes is often very low. But this mocktail is so tasty, it’s worth it. And you can always double the recipe to keep in the fridge for any time you’re looking for a little sparkle in your life. Cheers!


Makes approximately 2 mocktails.

Ingredients:

3 Oz Fresh Ginger Root

4-5 Lemons

2 C Water

1/4 C Honey

Fresh Mint Leaves

1 C Club Soda

Directions:

Peel the Ginger. Chop into small pieces. You can also use a food processor if you wish.

Use a vegetable peeler to remove the Lemon Peel from each of the lemons. Be sure to remove it without the white pith.

Juice the Lemons. (You will want approximately 1/2 Cup of Lemon Juice.)

In a small saucepan, heat the Water over medium heat until it reaches a simmer. Add the Lemon Peel and Ginger to the Water, remove from heat and let steep for 10 minutes.

Pour the Lemon/Ginger liquid into a small bowl. Add the Lemon Juice & Honey, and combine well. Place in the fridge to chill.

Once chilled, strain to remove all Peel and Ginger bits.

Pour equal amounts of the remaining Lemon Ginger Syrup into 2 glasses, add Ice if desired, and top with Club Soda. Garnish with Mint and serve.
