Put the Lime in the Coconut Mocktail

It’s National Coconut Day!

Coconut is a versatile tropical fruit that offers a myriad of health benefits. Coconut contains medium-chain triglycerides (MCTs), a type of healthy fat that is easily metabolized and converted into energy by the body. Additionally, coconut is a great source of fiber, aiding digestion and promoting a healthy gut. It is also known for its high electrolyte content, making it an excellent choice for rehydration. Packed with vital nutrients like vitamin C, potassium, and magnesium, coconut further strengthens the immune system, improves heart health, and regulates blood pressure.

Coconut is one of my favorite fruits, and I ‘m always looking for new ways to incorporate one of my favorite flavors into my recipes. Since we just kicked off Summer, what better way to celebrate this nutritional & delicious ingredient than in a mocktail!

This recipe uses light coconut milk, so it doesn’t feel like you’re chugging a milkshake. It also adds the light and breezy flavors of mint and lime making this a drink you’ll want on repeat all summer long!

Put the Lime In the Coconut Mocktail

Makes 2 Servings.

Ingredients:

  • ½ C Light Coconut Milk

  • 1 Lime, Juiced

  • 8 Oz Lime Seltzer

  • 15-20 Mint Leaves

Directions:

Divide the Juice from your Lime into two glasses.

Place the Mint Leaves in eah gglass with the Juice.

Muddle the Mint Leaves into the Juice.

Pour 1/4 C of Coconut Milk into each glass on top of the Juice & Mint.

Top each with Lime Seltzer.

Add Ice & garnish with Mint/Lime as desired.

Serve & Enjoy!

Notes:

Of course you may add your favorite alcoholic spirit to this recipe if you so desire. Tequila or vodka might be a nice addition if you’re interested.

You could freeze this recipe into an ice cube tray and blend it before adding the Seltzer to make a frozen beverage!

If you’ve got a min variation such as Lime Mint, that would be fantastic in this drink!
