Bunny Mary

Spring is about new beginnings and Spring celebrations. That means it’s time for fun cocktails! (Without the hangover, of course!) If you’re planning an Easter brunch (or any other Spring celebratory brunch), you will definitely need a gorgeous Spring cocktail for your tablescape.

Last year I shared the recipe for a Bunny Mimosa (get the recipe here). This has to be one of my favorite ways to celebrate Easter and Spring. This year, I went digging for something equally as fun, and decided on the Bunny Mary.

The Bunny Mary is a delicious Easter cocktail made with fresh carrot juice and a blend of spices. The earthy sweet carrot juice, paired with zesty spices, creates a refreshing drink that wakes up the senses and invites Spring into your celebration. This cocktail not only adds a festive touch to your table but also represents the theme of rebirth and the colorful festivities that mark the arrival of Spring.

Bunny Mary

Makes 6 drinks.

Ingredients:

  • 32 Oz Carrot Juice

  • 1/4 C Olive Brine

  • 1/4 C Pickle Juice

  • 1/4 C Worcestershire Sauce

  • 3 Tbl Lemon Juice

  • 2 Tbl Hot Sauce

  • 1 Tbl Old Bay Seasoning, optional

  • 1 tsp Salt

  • 1/2 tsp Black Pepper

  • 18 Oz Seedlip Garden

Instructions:

  • Pour the Carrot Juice into a large pitcher or other container. Mix in the remaining ingredients up to the Seedlip Garden.

  • Place in the refrigerator. Chill for a minimum of 30 minutes or overnight.

  • Fill a glass with ice and add 2 to 3 Oz of Seedlip, depending on your taste.

  • Pour the Carrot Juice mixture into the glass.

  • Garnish with celery, carrot, lemon, or whatever you like!

  • Enjoy!

Notes:

  • Feel free to use your favorite Vodka (Zeroproof or not) in place of the Seedlip.

  • This drink is best served cold. Chill the mixture before serving it.

  • Be sure to stir the Carrot Juice mix before pouring.

  • You can easily make the Carrot Juice mix ahead of time to let it chill, and let the spices marinade together.
